Herby Rice Pilaf

  • 2 cups cooked rice jasmine, basmati, or microwaveable rice like Uncle Ben’s Ready Rice
  • 1 tablespoon olive oil or butter, for added richness
  • 1/4 cup fresh parsley chopped
  • 2 scallions thinly sliced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1/2 teaspoon lemon zest optional, for brightness

Instructions
 

  • Prepare the Shrimp:
  • Rinse the shrimp under cold water and pat dry with paper towels. This helps them sear properly.
  • In a medium bowl, toss the shrimp with smoked paprika, red pepper flakes (if using), salt, and black pepper. Set aside.
  • Cook the Shrimp:
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Swirl the pan to coat evenly.
  • Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
  • Add the shrimp in a single layer. Cook for 2-3 minutes on one side until pink and slightly golden.
  • Flip the shrimp and cook for another 2 minutes, or until fully cooked (opaque and pink throughout).
  • Squeeze fresh lemon juice over the shrimp and toss to coat. Remove from heat and sprinkle with chopped parsley.
  • Prepare the Herby Rice Pilaf:
  • If using pre-cooked or microwaveable rice, heat it according to package instructions. For jasmine or basmati rice, cook 1 cup of dry rice with 2 cups of water, then fluff with a fork.
  • In a large bowl, combine the warm rice with olive oil, parsley, scallions, garlic powder, salt, black pepper, and lemon zest (if using). Toss gently to mix.
  • Assemble the Dish:
  • Divide the herby rice pilaf among plates or shallow bowls.
  • Top with the pan-seared shrimp, spooning any remaining garlic-lemon oil from the skillet over the shrimp for extra flavor.
