Ingredients
- 2 cups Quinoa
- 1 can Black Beans (rinsed and drained)
- 1 cup Corn Kernels (fresh, canned or frozen)
- 1 Ripe Vvocado (diced)
- 1 Cucumber (diced)
- 1 cup Cherry Tomatoes (cored & diced)
- 1/2 cup Fresh Parsley Leaves (chopped)
- 1 Lime (juice)
- 2 tbsp Olive Oil (extra virgin)
- Salt and pepper (to taste)
Instructions
- Cook the quinoa according to package instructions.
- Once cooked, set aside and let cool.
- In a large bowl, combine the cooked quinoa, black beans, corn, avocado, cucumber, cherry tomatoes, and chopped parsley leaves.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the quinoa salad.
- Toss gently to combine.
- Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
