Potato salad is a great summer dish made with boiled potatoes. It is often served as a side at picnics, barbecues, and potluck gatherings.

Potato Salad
This is a great side dish and a perfect addition to any potluck.
Ingredients
- 12 Red Potatoes (boiled, peeled, and cubed)
- 3 Hard-boiled Eggs (peeled and sliced)
- 1 cup Mayonnaise
- 2 tsp Yellow Mustard
- 1 tsp Dijon Mustard
- 1 tbsp Apple Cider Vinegar
- 1/2 cup Sweet Relish
- 1/4 tsp Paprika
- 1 tbsp Fresh Dill (chopped)
- 1/2 tsp Salt
- 1/4 tsp Pepper
Instructions
- PEEL the potatoes.
- CUT the potatoes into quarters.
- PLACE the potatoes in a large pot.
- ADD cold water until potatoes are covered.
- BOIL potatoes for 10 minutes, until tender.
- DRAIN and set aside.
- MIX mayonnaise, apple cider vinegar, sweet relish, paprika, fresh dill, yellow and dijon mustards in a large bowl.
- ADD potatoes, salt and pepper to the mixture.
- STIR together until potatoes are coated.
- FOLD in the sliced eggs.
- ENJOY!
