Potato Salad

This is a great side dish and a perfect addition to any potluck.

Ingredients
  

  • 12 Red Potatoes (boiled, peeled, and cubed)
  • 3 Hard-boiled Eggs (peeled and sliced)
  • 1 cup Mayonnaise
  • 2 tsp Yellow Mustard
  • 1 tsp Dijon Mustard
  • 1 tbsp Apple Cider Vinegar
  • 1/2 cup Sweet Relish
  • 1/4 tsp Paprika
  • 1 tbsp Fresh Dill (chopped)
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions
 

  • PEEL the potatoes.
  • CUT the potatoes into quarters.
  • PLACE the potatoes in a large pot.
  • ADD cold water until potatoes are covered.
  • BOIL potatoes for 10 minutes, until tender.
  • DRAIN and set aside.
  • MIX mayonnaise, apple cider vinegar, sweet relish, paprika, fresh dill, yellow and dijon mustards in a large bowl.
  • ADD potatoes, salt and pepper to the mixture.
  • STIR together until potatoes are coated.
  • FOLD in the sliced eggs.
  • ENJOY!
