Potato Salad
This is a great side dish and a perfect addition to any potluck.

- 12 Red Potatoes (boiled, peeled, and cubed)
- 3 Hard-boiled Eggs (peeled and sliced)
- 1 cup Mayonnaise
- 2 tsp Yellow Mustard
- 1 tsp Dijon Mustard
- 1 tbsp Apple Cider Vinegar
- 1/2 cup Sweet Relish
- 1/4 tsp Paprika
- 1 tbsp Fresh Dill (chopped)
- 1/2 tsp Salt
- 1/4 tsp Pepper
PEEL the potatoes.
CUT the potatoes into quarters.
PLACE the potatoes in a large pot.
ADD cold water until potatoes are covered.
BOIL potatoes for 10 minutes, until tender.
DRAIN and set aside.
MIX mayonnaise, apple cider vinegar, sweet relish, paprika, fresh dill, yellow and dijon mustards in a large bowl.
ADD potatoes, salt and pepper to the mixture.
STIR together until potatoes are coated.
FOLD in the sliced eggs.
