Ingredients
  

  • 4 large flour tortillas 10-inch; spinach or whole wheat tortillas work well for added flavor and color
  • 1/2 cup cream cheese softened (Philadelphia Original or a flavored variety like chive and onion)
  • 1 tablespoon Dijon mustard optional, for a tangy kick
  • 8 slices deli turkey, ham or roast beef thinly sliced; smoked or oven-roasted turkey works best
  • 1 cup fresh baby spinach washed and dried
  • 1/2 cup alfalfa sprouts or microgreens for a milder flavor
  • 1/2 cup shredded carrots optional, for added crunch and color
  • 1/4 cup thinly sliced red bell pepper optional, for a sweet, crisp bite

  • Toothpicks to secure the rolls

Instructions
 

Prepare the Ingredients

  • Wash and dry the baby spinach and alfalfa sprouts thoroughly.
  • Soften the cream cheese by letting it sit at room temperature for 10-15 minutes or microwaving for 10 seconds. Mix with Dijon mustard if using.
  • Thinly slice the red bell pepper and shred the carrots, if adding.

Spread the Cream Cheese

  • Lay one tortilla flat on a clean surface or cutting board.
  • Using a butter knife or offset spatula, spread a thin, even layer of cream cheese over the entire surface of the tortilla. Be sure to spread all the way to the edges to help seal the roll.

Layer the Fillings

  • Place 2 slices of turkey evenly across the center of the tortilla, leaving about 1 inch of space at the edges for easier rolling.
  • Add a layer of baby spinach leaves, followed by a small handful of alfalfa sprouts.
  • Sprinkle shredded carrots and red bell pepper slices evenly over the top, if using.

Roll the Tortilla

  • Starting from one edge, tightly roll the tortilla into a log, keeping the fillings in place as you go.
  • Press gently but firmly to ensure a compact roll. The cream cheese will help seal the edge.

Slice into Pinwheels

  • Use a sharp knife to trim the uneven ends of the roll (chef’s treat!).
  • Slice the roll into 1-inch pinwheels, wiping the knife clean between cuts for neat slices.

Repeat

  • Repeat the process with the remaining tortillas and fillings.
