Mango Salsa

  • 2 ripe mangoes peeled, pitted, and diced
  • 1 medium tomato diced (Roma or cherry tomatoes work well)
  • 1 ripe avocado diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 small jalapeño finely diced (optional, for heat)
  • 2 tablespoons fresh lime juice about 1 lime
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon freshly cracked black pepper or to taste

Homemade Tortilla Chips

  • 6 small corn tortillas or flour tortillas for a softer texture
  • 2 tablespoons vegetable oil or olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili powder optional, for a smoky kick

Instructions
 

Prepare the Mango Salsa:

  • Dice the Mangoes: Peel the mangoes and cut the flesh away from the pit. Dice into small, even cubes for a consistent texture.
  • Dice the Tomato: Remove the seeds for a less watery salsa, then dice the tomato into small pieces.
  • Dice the Avocado: Cut the avocado in half, remove the pit, and scoop out the flesh. Dice into slightly larger chunks to maintain its creamy texture.
  • Chop the Onion and Jalapeño: Finely chop the red onion and jalapeño (if using). Remove the seeds from the jalapeño for less heat.
  • Combine Ingredients: In a medium mixing bowl, gently combine the mango, tomato, avocado, red onion, cilantro, and jalapeño.
  • Add Lime Juice and Seasoning: Drizzle with fresh lime juice, sprinkle with salt and pepper, and toss gently to coat. Taste and adjust seasoning as needed.

Make the Homemade Tortilla Chips:

  • Preheat the Oven: Set your oven to 375°F (190°C).
  • Cut the Tortillas: Stack the tortillas and cut them into 6 wedges each, creating triangle-shaped chips.
  • Season the Chips: In a large bowl, toss the tortilla wedges with vegetable oil, salt, and chili powder (if using) until evenly coated.
  • Bake the Chips: Arrange the tortilla wedges in a single layer on a baking sheet lined with parchment paper. Bake for 8-10 minutes, flip the chips, and bake for another 5-7 minutes, or until golden and crispy. Keep an eye on them to prevent burning.
  • Cool the Chips: Remove from the oven and let them cool completely on the baking sheet. They will crisp up further as they cool.
