Preheat your oven to 350°F.
Line baking sheets with parchment paper.
Cream the butter and sugar in a large mixing bowl using an electric mixer until light and fluffy, about 2 minutes.
Add the egg and beat well. Mix in the vanilla extract and pumpkin puree until fully combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. (Avoid overmixing to ensure the cookies stay soft.)
Drop tablespoon-sized amounts of dough onto the prepared baking sheets, leaving some space between each cookie.
Bake until the edges are lightly golden, and the centers appear set (approx. 12 -15 minutes).
Remove from oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack.
