Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¾ cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt

Instructions
 

  • Preheat your oven to 350°F.
  • Line baking sheets with parchment paper.
  • Cream the butter and sugar in a large mixing bowl using an electric mixer until light and fluffy, about 2 minutes.
  • Add the egg and beat well. Mix in the vanilla extract and pumpkin puree until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. (Avoid overmixing to ensure the cookies stay soft.)
  • Drop tablespoon-sized amounts of dough onto the prepared baking sheets, leaving some space between each cookie.
  • Bake until the edges are lightly golden, and the centers appear set (approx. 12 -15 minutes).
  • Remove from oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack.
