Slice a pocket into each pork chop by carefully cutting horizontally through the thickest part of the chop, being careful not to cut all the way through.
Stuff the Pork Chops (Optional)
Season each pork chop with salt and pepper.
Fill the pocket of each chop with about 1/4 cup of the stuffing, pressing it in gently.
Brown the Pork Chops
Heat olive oil in a large oven-safe skillet over medium-high heat.
Add minced garlic and sauté until fragrant, about 30 seconds.
Place the pork chops in the skillet and sear each side for 3-4 minutes, until browned.
Bake the Pork Chops
Sprinkle thyme and sage over the chops and pour chicken broth into the skillet.
Transfer the skillet to the preheated oven.
Bake for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
Serve
Remove the pork chops from the oven and allow to rest for 5 minutes.
